Tandoori Express Chicken Naanwiches with Sour Cream Raita and Buttermilk Mango Lassi
Makes 4 to 6

CHICKEN NAANWICH
2 skinless boneless chicken breasts, about 9 oz each, trimmed, and pounded to even 1/4” thickness , seasoned generously with salt and pepper
½ tsp turmeric
½ tsp ground cayenne
½ tsp cumin
½ tsp garam masala
½ cup Hood® Sour Cream
2 tsp garlic, minced and divided
4 Tbsp light olive oil, divided
2 Tbsp butter
4 Tandoori-style naan flatbreads
8 large, thin slices of ripe mango
8 leaves of lettuce
MANGO LASSI AND SOUR CREAM RAITA

For mango lassi:
2 ½ cups fresh mango, cut into chunks (frozen or canned can be substituted)
8 Tbsp agave syrup
1 cup Hood® Buttermilk
1 cup Hood® Lowfat Milk
¼ tsp fresh grated Lime zest

For sour cream raita:
1 cup Hood® Sour Cream
¼ cup cilantro, minced
¼ cup red onion, finely diced
¼ cup pickled jalapeno, finely minced
¼ cup roasted red pepper, finely minced

Blend mango and syrup together; add buttermilk, milk and zest; blend smooth. Strain through a sieve and chill. Make raita: stir together sour cream, cilantro, onion, pickled jalapeno and pepper into a small serving bowl.

Slice chicken nearly through horizontally, open, and pound flat to the size of your naan. Mix together turmeric, cayenne,cumin, garam masala and sprinkle half onto chicken, add remaining spice mixture and 1 teaspoon of garlic to sour cream in a pie plate to mix. Brush surface of chicken with sour cream mixture. In nonstick skillet, heat 3 tablespoons oil to shimmering. Cook flattened chicken (one at a time) until just cooked through, about 3-4 minutes per side (testing 160 degrees). Remove; keep warm. In a clean large nonstick skillet, heat remaining 1 Tbsp oil and butter. Add remaining teaspoon garlic. Warm naan until golden and pliable. Remove from heat and keep warm. To assemble, spread raita on inside of warm naan, stopping ½” from edges. Top with chicken, mango slices  and lettuce, and then top with naan. With a sharp knife or rotary cutter, cut naanwiches into 4 pieces. Serve with small glasses of lassi on the side and additional raita on side.
